As coffee is roasted darker, the sugars burn and the body begins to diminish, which can result in a cup that is bitter and thin if roasted too long, so the trick is to roast to a level that is fairly dark but not too far into the stage of destroying the robust character and depth of flavor. The beans we choose for this coffee hold up to this kind of roast very well. 100% of the coffees in this blend come from Rainforest Alliance Certified™ farms.\u003cbr\u003e\u003cbr\u003eCup characteristics: Robust, pungent, smoky, a little bit nutty, with a hint of sweetness still present.
